You can keep the mushrooms indoors for a very short time:

  • at room temperature - from 6 to 8 hours;
  • in a cold place (basement of a house, cellar, bathroom) - up to 12 no.

To do this, they are folded into a plastic or enamel container (this can be a saucepan, basin, bucket).

Helpful information: so that the mushrooms do not spoil for a longer time, it is still desirable to store fresh mushrooms at a temperature not exceeding 4 ° C.

There are several ways to store mushrooms in the refrigerator:

  1. On the shelf open: with this option, they will last about 2 days.
  2. In the lower vegetable tray: champignons are neatly laid in one layer (excessive pressure causes a decrease in the shelf life), covered with a paper towel on top. You can use cling film instead of a towel by punching holes in it with a toothpick. This will prevent the build-up of condensation that can spoil fresh food. It will be possible to save the mushrooms from 3 to 5 days.
  3. Vacuum packed: in a whole, intact (just brought from the store), the catherine can be safely stored for 7 days. After opening the package, you will need to use the supplies within 2 days.
  4. In a paper bag: quite an effective way. On open shelves, the period is up to 4 days, in a vegetable tray - about a week. Important. Do not put more than 0.5 kg of mushrooms in the bag.
  5. In bags made of natural materials: the method is becoming more and more successful. On the shelf, the product will last from 8 to 9 days, in the vegetable compartment - up to 12 days.
  6. In plastic, glass, metal dishes: from above, the container must be covered with a paper towel, cloth. Using this method, it will be possible to save the baker for up to 10-12 days.
  7. In a plastic bag, cling film: in this way, fresh champignons can be stored for 5 to 7 days. The bag must be periodically opened to evaporate the resulting condensation. It is better to change the film every day, making sure that the mushrooms do not darken, do not start to rot, deteriorate.

When placing fresh mushrooms in the refrigerator for storage, they must not be washed or cleaned. When stored in a plastic bag, it must be regularly opened for ventilation and the mushrooms must be examined at the same time. This is done to remove sluggish and rotten fruit bodies. If condensation appears on the inner surface of the bag, the mushrooms are immediately transferred to a new package.

Storing fresh champignons in the refrigerator requires adherence to several rules:

  • do not wash them beforehand, because moisture contributes to the speedy spoilage of raw mushrooms;
  • the caps are carefully cleaned with a knife;
  • the leg is cut from below (the old cut is removed), the film is removed;
  • particles of sand, soil are removed by wiping the contaminated areas with a brush, a damp towel.

All darkened and wrinkled places are also cut off in order to preserve the product as long as possible.

In the freezer

An excellent option for storing champignons at home. In frozen form, fresh peppers retain their shelf life up to six months (deadline), provided that the maximum temperature does not exceed -18 ° C.

It is better not to exceed the period of 3-4 months for storing fresh mushrooms in the freezer. But boiled champignons will successfully "rest" there for about 6 months. For storage, tight plastic bags (preferably with a Zip-Lock fastener) or airtight containers are perfect, which well protect the food contained in them from air and moisture from outside.

Freezing stages:

  1. The catherine selected for freezing is wiped off with a paper towel. It is undesirable to wash it, as in the case of the refrigerator - the absorbed water in the freezer will become ice, due to which the pulp will swell and acquire porosity. This will reduce the taste of the cooked product.
  2. Remove the film from the caps with a knife, damage. After defrosting, it will be difficult to remove all of this.
  3. Large specimens are cut into pieces. These can be cubes, plates. This will not affect the taste of the product itself.
  4. Spread the prepared fresh mushrooms on a flat tray, baking sheet. Put in the freezer for several hours.
  5. They are laid out in airtight containers - containers, packages, trays. Put it in the freezer for storage.

Defrost gradually: first, the containers are transferred to the upper shelf of the refrigerator, left there for several hours. Only then can you start cooking.

For your information: thawed champignons are not recommended to be re-frozen.
